This recipe was given to me by my friend Cathy Xi.  It’s super healthy and yummy tasting.

1 cup all-purpose flour
1 cup oatmeal
1 teaspoon baking soda
1/4 teaspoon salt

1/3 cup brown sugar
1/4 canola oil / veg. oil
2 eggs beaten
2 1/3 cup mashed ripe banana (about 4 big banana, or 5 small ones) mashed into small cubic, but not too mashed.
1 cup crushed walnut (small cubics for better results)
1 cup dry cranberry or rasin

Use a wooden spoon, mixer not necessary.  Mix first 4 items in one big bowl.  Mix the rest of the items in a smaller bowl.  Pour stuff in the small bowl into the big bowl and mix more.

Preheat oven to 350F, bake for 60 minutes (depending on your oven, for mine I set it at 325F for 60 mins).  Lightly grease a 9X5 loaf pan.
